What is an old model of motorcycle that is very fast and great for experts?
Old meaning before 2000, I know? not much? About Motorcycles, but perhaps one from the right, if they are already perfected. Has not the fastest, just fast .* Before 1980

Look for an old Kawasaki KZ1000, little hard to find as most the engines have been used up in spec racing series like Legends cars and Bandalaros, but there's still a few out there, Suzuki made a 1000 sport bike also but nowhere near as good as the KZ.

Get a 1980 or so 750 Honda. Those things fly…..I have one. They can be picked up very cheaply. Because of the age, the gas tank may need sealing……no problem, get POR-15 (Google it). It seals the rust and keeps the gas clean. The tank comes off easily…..2 bolts gets the seat off, 1 bolt gets the tank loose, disconnect the gas line and it's off.

I hope you're not considering something like this as a first bike! And do you understand what "very fast" means, in motorcycle terms? We're talking about something quicker than 99% of road-going cars. Do you think that you are ready for this? Do you have the skills? You are referring to a time when engine technology was well ahead of frame, suspension and brake development, meaning that you need to know what you're doing on one of these machines.
I have a heavily modified 1981 Honda CB750F (approaching 90 rear-wheel horsepower), and the few friends that I have allowed to ride it were shocked at its handling, and wondered how I could ever manage to ride it at speed and maintain control. The answer was simple: They had been unaware that I was riding much closer to "the edge" than they were on their lighter, better-handling bikes.
Any triumph bonnville will do. They set a land speed record on the bonnville salt flats. That's where it gets it's name.

Before 2000 there were a bunch. The CBR1100XX is still my all time favorite, Id pick it over any new bike. The Hayabusa and ZX-12R also debut in 1999. The Yamaha Thunderace can kinda be grouped in with that bunch. The ZZR1200, 1100, R1 and Fireblades are very fast too.
The 80s had a ton of fast bikes, most notably the Vmax, my dads all time favorite. Also the GPZ900 and 1100, the big KZs (I have a 82 1100, I like alot), the V65s and the early Gixxers. Also the 500cc twostrokes in some countries.
But from the 70s? The Kawasaki Z1 and its variants, including the KZs, and the Honda CBX. But they really arent all that fast. At least not by modern standards.
Kawasaki KH750 H2 – There's never been a more mental motorbike. At the time it was nicknamed the 'widowmaker' and an H2 still holds the production bike 1/4 mile drag strip record (under 9 secs!!)
Also there's my personal favourite ever roadbike a Suzuki RG500 Gamma – Made from 1985-1987 its baically an 80s GP bike for the road and with a good rider in the twisties will keep up with modern litre bikes.
69-78 750 honda single cam motor was practically indestructable. 78 1/2 and up 750s had more power. I crashed my 78 doing 130 when I was young and silly. How about a 1980 honda CBX1000? 6 cylinders of leg spreading fun. That was a fat motor on that bike but it was sweet. 1970 Kawasaki KZ900 is the original undefeitable street fighter. The old KZ750 was crazy fast too, but that 2 stroke motor was hard to listen to, ring ting tinging in your ears. Out of all these, the KZ900 is my personal favorite, with the CBX1000 in close second. They still make me drool 35 years later.

Looking for a first bike? ANY bike will be fast, trust me. I was a mechanic at a Kawasaki dealership for a couple of years and most people don't understand just how well a motorcycle performs.
I own a little Ninja 500 with a two cylinder 500 cc engine. This is half the size and half the cylinders of the KZ1000 but it will do 0-60 in about 3.8 seconds and a quarter mile in about 13 seconds. This is about equal to a Dodge Viper, and the Ninja 500 is considered a beginners bike.
If I were you I would look for a bike that isn't a "sport bike" and here's why.
Sportbikes attract young guys that want to go fast. This means that they are overrepresented in collisions. Sportbike insurance rates will be significantly higher then a then a bike that isn't a race replica.
Sportier bikes are geared towards track racing. This means that they perform best at triple digit speeds. Speeds that would get you arrested on the roads you will mostly be traveling on. How much fun would it be if you had to ride at speeds that are only using a third of your bikes potential all the time?
Also you will tip your first bike. Sportbikes with there expensive plastics can be totaled by an insurance company if it tips over in a parking lot.
If I were you I would look at
Honda CB650SC, CB700SC or CB750 nighthawks, The 500 Ascots or 500 interceptors.
Kawi's I check out the GPZ 550 or the Ninja 500
Suzooks GS500 or the 550-650 Katana's
Yamies have the FJ600 and the YX 600 Radian and the XJ600S Seca II
All these are sporty enough to keep you grinning in your helmet for a couple years and they won't break the bank.
