Awesome bikes I have several not for sale. There must thousands out there because there were so many made choppers in the late 70s and early 80s.Look around!! Stock to chop…start simple..Bars..seat……paint….would be more rewarding than to alter stock frame..etc.Your bike… enjoy !
You realy wanna mess with it if it's in awesome condition? Just asking.
molitor put up a great link, another one is cyclexchange.net.

depends on your cash flow and what you want- image or practical performance. Honda CB750 was compromise street machine- for extra high speed stability the extended front end was a standard- but anything over 6 inch is defeating purpose on street machine- opinion based on many years experience. A 1inch spacer under top tree or a bent down top tree plus a 2.75/3.00/3.25 21 inch front tire with a trimmed front fender will retain easy in town handling while giving extra 10mph higher highway stability, rain drop out of eyes protection. Low contour seat and trimmed back fender gets close to classic bobber. A 4 into 2 exhaust or a set of 4 shorty's mufflers will be a little lighter and should give you the extra noise many people seem to like while still being legal enough to pass police inspection for the year- I don't recommend straight pipes, too much trouble possible. The extreme image is expensive hardtail frame and springer front– I had one and it is interesting but impractical for long runs, does pull wheelies fun.. A slight enrichment of carbs will give a bit more acceleration, not much needed as EPA lean rules were about 1979/1980 .

Keep that 1 stock. Buy any later Jap 4 banger and chop that. The Yamaha Maxim X were serious race engines in cruiser styling.
